Green tea is extremely popular today. Green tea, which originates from China but is also associated with other Asian cultures, is made from the Camellia sinensis leaves. Varieties of green tea are due to different growing conditions, methods of processing, and harvest time.
White tea, when processed, tastes less grassy
because of way the leaves are allowed to slightly wilt before production. Like green tea, white tea is also made from Camellia sinensis, but white tea is somewhat oxidized.
Black tea is oxidized more than white, contains more caffeine than green or white teas, and is stronger in flavor. While named black tea, the color is more of a red color, thus called crimson tea
in the Chinese culture. Black tea retains its flavor longer than green, and thus has a longer shelf-life.
Oolong tea is oxidized more than green tea, but less than black tea. While taste is closer to green tea (it isn't as sweet smelling as black tea), oolong tea lacks the grassy
taste described in green teas. In typical Chinese restaurants, oolong tea is the most popular type of tea served.
